Ingredients
4.0 tbsp Curry powder5.0 tbsp Basil2.0 1tsp Coconut Oil13.0 ounces Chicken Breast skinless1.5 cup, Broccoli cut into strips fresh (I used broccoli slaw salad bag)1.0 cup, cubes Eggplant, fresh1.0 cup Bell peppers (Green, Red, Yellow, Orange)1.5 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)2.0 cup jasmine rice
Directions
Make jasmine rice 2 cups Cook chicken breast in coconut oil until done add veggies, red curry paste and coconut milk. Simmer until veggies are to desired tenderness. Mix rice and veggie sauce all together. Garnish with fresh thia basil. Serving Size: Makes 5 - 1 cup servings
