Keto Pepperoni Pizza - HFLC - not fathead

Ingredients
1 cup, plus 3oz shredded Whole Milk Mozzarella Cheese1 cup shredded Cheddar Cheese 1 large Egg white, fresh 1 tsp Garlic powder 1 dash Salt 1 dash Pepper, black 1 tsp Rosemary 2/3 cup Rao's Pizza Sauce for topping3 oz Mozzarella Cheese for topping (reserved above)4 grams Pepperoni for topping, slicedParchment lined baking sheet
Directions
* Reserve 3oz of Mozzarella for topping the pizza*

1) Pre-Heat the oven to 425 Degrees
2) Combine the cups of Mozzarella and Cheddar into a microwave safe bowl.
3) Heat in microwave 30 seconds at a time (typically less than 1 min total) until softens
4) Once soft, combine the cheese mixture with the egg and spices.
5) Spread the "dough" out on a parchment lined backing sheet. You want a thin covering across the sheet, be sure to fill in any holes
6) Bake in the oven for 10 - 15 minutes. At least until the cheese browns and the consistency is close to pizza crust
7) Remove from oven and switch the oven to Broil @ 500 Degrees
8) Cover the dough with sauce, the reserved cheese, pepperoni and any additional desired toppings
9) Place back in oven for 2-3 minutes, typically until cheese topping has melted
10) Serve
