Rice and Edamame Bowls

1/2 cup dried brown rice (1 c. cooked)1 cup edamame, shelled (steamed)1/4 cup dried cranberries1/2 cup fresh parsley1/4 cup fresh mint leaves2 oz feta cheese10 kalamata olives, pitted and halved3/4 tbsp hot pepper flakes1 tbsp olive oil1 tbsp lime juice (one small lime)
Cook the rice and steam the edamame. Toss with the other ingredients and then split into two bowls. Perfect simple dinner for two.
