Vegan Bruschetta

2 tomatoes1/2 teaspoon minced garlic1 teaspoon balsamic vinegar8 fresh basil leavesblack pepper - to taste12 slices (1/2 inch) of a long loaf of Italian bread
Mix all topping ingredients together. Spread evenly over each slice of bread. Toast until crisp at 375 deg. You can mix the topping ahead of time to blend flavor together.

This was really good. I made it for an appetizer when my friends brought pizza over. I only had dried basil but it worked well enough. I also added a bit of dehydrated minced onion. My friend and I loved it! I just served it more as a dip with crostini for simplicity. I didn't have to use the oven. - 12/14/13
