Tropical Dreamsicle Nice Cream

Ingredients
1 13.5oz can Coconut Milk4 Apricots (pitted)3 Tangerines (peeled)1 Banana (peeled)1/3 cup Longan, Lychee, or Rambutan (peeled and pitted)2 tsp Vanilla Extract 1 oz Everclear, unflavored vodka, or other neutral alcohol
Directions
Place all of the ingredients into a blender and blend until fairly smooth- a little pulp is fine!

Chill the mix in the refrigerator for at least two hours.

Place the mixture into an ice cream maker and follow the manufacturer's instructions.

For a soft serve style ice cream, scoop out of the ice cream maker and server immediately after churning. For hard ice cream, place in tupperware and freeze for at least two more hours.

Serve with the toppings of your choice (I love mine with fresh fruit!)


ADDITIONAL NOTES:

If you do not consume alcohol, you can substitute that with a bit of xanthan gum. The role of the alcohol/xanthan gum is to prevent the ice cream from freezing into a solid block.

You can substitute seedless oranges, clementines, or other sweet, seedless citrus fruits for the tangerines.
