Easy Low-Fat Individual Peach Cobblers

1/4 c. Heart Smart Bisquick1 Large egg1/2 c. skim milk2 packets or 1 tsp Splenda8 oz Del Monte Lite Diced Peaches (drained)
Drain and separate peaches into 4 individual dessert cups that are oven safe. Mix egg, Bisquick, skim milk and Splenda together in a small bowl until well mixed then pour 1/4 of mixture over top of each cup of peaches.
Bake at 400 degrees for approx 15 minutes or until the topping is brown.
Can be served cool or hot. If desired, cool and top with a tsp of fat-free cool whip.
This is so easy to make and I do it in stemmed clear dessert cups, cool and top with the cool whip. Not only does it taste wonderful but it looks like you spent a long time making it!
Makes 4 servings at less than 100 calories each, even with the whip topping!

Added extra 1/4 C bisquick and splash of vanilla. Used 1/4 C egg substitute instead of an egg. Used 15 oz no sugar added peaches and sprinkled Splenda and cinnamon on top before adding bisquick mixture. Split up into 3 ramekins which came out to 130 calories each. Baked 25-30 min @ 400. I added some frozen blackberries to the peaches, some flax seed to the bisquick & some sugar to the peaches (as I used frozen, unsweetened)... it was pretty good, but such a SMALL portion. It sort of just made me hungrier for something else... I added a 1/4 c of yogurt to the side... it was okay.. - 9/28/08
