Cherry Pecan Scones

Ingredients

1/4 c dried cherries1/4 c chopped pecans1/8 t salt1 t baking powder1 t baking soda2 T plus 2 t butter or margaringe1 egg substitute, slightly beaten1/2 c plain low fat yogurt1/4 t grated lemon peelsweetner equivalent to 6 t sugar
Place cherries and pecans in bowl and stir to
coat.
In another bowl mix remaining flour, salt, baking powder, baking soda.
Cut in Margarine until mixture resembles coarse crumbs.
Add egg, yogurt, lemon peel, and sweetner, mix well.
Add egg mixture to dry ingredients. Mix well
Divide into 8 portions. Place on a non stick baking sheet or one sprayed with non stick cooking spray.
flatten each ball to 1/2 inch. Bake 12-15 min until golden. Cool on rack. Serve warm
