Kashi Go Lean Muffins

1 cup whole wheat flour2 tsp. baking powder1/2 tsp. salt1 3/4 cup Kashi Go Lean cereal3/4 cup light vanilla soy milk1/4 cup honey2 egg whites1/4 cup applesauce1 medium ripe banana
Spray muffin tin cups with cooking spray and preheat oven to 400 degrees.
In a small bowl, stir together flour, baking powder and salt.
Set aside.
In a large mixing bowl, combine cereal and milk and let stand for 2-3 minutes.
Add the honey and egg whites and beat well.
Stir in apple sauce and banana.
Add flour mixture and mix only until dry ingredients are moistened
Fill sprayed muffin tins.
Bake for 25 minutes.

Followed recipe as written, to keep the calorie content low I used unsweetened almond milk as well as unsweetened applesauce, my major problem was that these stuck to the paper liners I used :-( next time I'll use aluminum liners and triple spray with non stick spray. Other than that they weretasty - 6/19/11
