Crab Spinach Quiche

8oz. imitation crab meat4oz. part-skim mozzarella cheese, shredded (may use 1 cup shredded mozzarella)3/4 frozen cut-leaf spinach2 tbsp. minced onion4 eggs1 cup 2% milk1/2 tsp. salt1/2 tsp. ground mustard1/4 tsp. black peppperdash paprika
Pre-heat oven to 400F. Spray 9-inch pie plate with non-stick spray. In a medium bowl, flake crab meat with fork. Add cheese and minced onion. Toss to combine. Press into bottom of pie plate. Spread spinach over the top of the meat. In same bowl, beat eggs, milk, and remaining spices. Pour over the meat in pie plate. Bake for 40 minutes, until completely set in middle.
