1.5 cucumber (8-1/4") Cucumber (with peel) .5 cup, chopped Onions, raw 2 large (2-1/4 per lb, approx 3- Sweet peppers (bell) 20 cherry Red Ripe Tomatoes 250 grams Feta Cheese 30 jumbo Black Olives 4 tbsp Olive Oil 2 tbsp Aspalls Organic White wine vinegar (by C25KGAL) 1 serving Lemon, fresh squeezed, juice of one whole lemon 1.5 tbsp dried oregano
Chop all veg, mix all ingredients together in sealable container.
Allow to sit at room temperature for at least 1 hour before consuming - the flavours need time to mix, and the olive oil can be solid lumps if eaten straight out of the fridge.
