Ingredients
0.5 cup (not packed) Cottage Cheese, 1% Milkfat9.0 large Egg, fresh, whole, raw2.0 serving Cheese, Great Value, Finely Shredded Pizza Blend Cheese, 1/3c (28g)1.0 oz hormel pepperoni miniseason with italian herbs blend, salt and pepper topped with a dash of crushed red pepper flakes.
Directions
Whip together eggs and cottage cheese until blended. Scramble in a preheated skillet (I used a liitle butter in the pan but you can use cooking spray) When eggs are almost fully done ( the should look shiny but not be fully wet) pat them down to cover the pan evenly (like a pizza crust) top with mini pepperoni and cheese. Broil until cheese is fully melted. Serving Size: cut into 4 pizza slices
