Ingredients
1 cup All-Bran Buds2 cups All-Bran "Sticks"1 cup water0.5 cup Mott's Country Berry Apple sauce2 cups lowfat buttermilk1 cup Splenda Granular1 cup egg beaters2.5 cups whole wheat flour2.5 tsp baking soda1 tsp salt2 scopes whey protein (about 42 grams)
Directions
1) Put Bran buds and sticks in large bowl
2) Boil water and add to bran, let stand a few minutes
3) Mix in apple sauce, splenda, egg sub, and buttermilk
4) In a separate bowl, mix flour, soda, whey, and salt
5) Slowly add flour mixture to bran

Bake at 400 degrees for 15-20 min

Makes about 6 cups. At 1/4 cup per muffin you will get 24 muffins.

Will stay good in the refrigerator for about 6 weeks. In fact, I prefer to make them the night before and let it sit in the fridge overnight before baking.

    Oh my goodness. These muffins are great! My family is SO picky and yet everyone of them ate the muffins and commented that they want more in the future. I plan to freeze them and have them available for breakfast regularly. Whey protein was new to me - but it is a nutritional supplement. Found it! - 1/19/09
