Red Wine Cake

¾ cup sugar½ tsp salt1 tsp vanilla ⅓ cup canola oil¼ cup applesauce1 cup red wine1 ½ cups whole wheat pastry flour⅓ cup unsweetened cocoa powder1 tsp baking sodaMelted chocolate for topping (not included in NI)
Heat the oven to 300F and line a 7” springform pan with parchment
Whisk together the sugar, salt, vanilla, oil, applesauce and red wine until well combined.
Add the flour, cocoa and baking soda and whisk smooth.
Bake for 50 minutes, until the toothpick inserted in the center comes out clean.
Let the cake cool for 30 minutes in the pan, then remove the sides and cool completely on a wire rack.
Melt chocolate and pour over the cake to decorate, if desired.
Serving Size: Makes one 7" cake, 12 slices
