Sweet Potato Curry

Ingredients
1 sweetpotato, 5" long Sweet potato 1 cup Kroger Chick Peas (canned) 1.5 cup Coconut Milk (Silk) 0.66 cup peas, frozen, Great Value Sweet Peas 1 small Onions, raw 0.5 can Canned Tomatoes 2 tbsp Canola Oil 1 tbsp Curry powder
Directions
In heavy bottom saucepan heat canola oil, add small chopped onion, chopped ginger, garlic, simmer for 4 min., mix curry powder (30 sec.); add sweet potato and chick peas, 1 cup of water, coconut milk, salt & pepper to taste; increase heat to boil, reduce heat, cook uncovered until potato is tender ( 10 min.); add sweet peas and crushed tomatoes, cook until heated through. Serve in bowls or over cooked rice (optional).
