Black Bean and Corn Salad

1 3/4 cup black beans, drained and rinsed2 cups frozen corn, do not thaw3 large tomatoes, seeded and diced1/2 large red onion, chopped1 small bunch cilantro, choppedJuice of one lime1 T. olive oil1 tsp red wine vinegar
Combine beans, corn, tomatoes, onion and cilantro into large bowl. In separate small bowl, mix olive oil, lime juice, and vinegar; combine well. Pour over salad ingredients and toss lightly to combine. Chill before serving.
Extras:
*Place lime in bowl when finished for garnish and a little bit more lime flavor
*Add cubed avocado just before serving
Makes 8 servings.
