Mizz Moxie's Freeze-Ahead Omlette Muffins

Ingredients
1 cup Kirkland Signature Shredded Mozza-Cheddar Cheese 136 gram(s) Harvest Pure Pork Sausage 123.8 grams Spinach, fresh 15 serving 1 Large Brown Egg 97 gram(s) Potato - Plain Baked Russet Potato 1.279 cup Tomatoes - sm cherry tomatoes 112 grams Tofu, firm
Directions
Mix all ingredients together, pour into buttered muffin tins leaving 1 cm of space (do not overflow). Cook at 350F for 15-25 mins. Remove from pans immediately and cool on rack before freezing.
If you have a sealer, seal 2 in individual bags to grab on the go.

NOTE: It's REALLY important that you grease your muffin tins, even if they are non-stick! I have a ridiculously amazing non-stick pan and these eggy muffins WILL stick!
