Greek Salad

Ingredients
Salad ~1 cucumber peeled, cut in 8th and sliced1 pkg of grape tomatos cut in half1 8oz package of feta cheese, crumbled1 bag of spinach (can use baby)1 box of penne pasta cookedred onion, diced (optional)black olives (optional)cooked and marinated meat (optional)Dressing~4 oz red wine vinegar1-2 tsp oregano1/8 tsp salt1/4 tsp pepper1 tbsp sugar1 tbsp lemon juice2 cloves garlic (i use a press)4 oz extra light olive oil
Directions
Start the water for the noodles. Mix all the ingrediants for the dressing except the oil. Cook the noodles according to box and personal choice (i like mine cooked about a minute longer because they firm up as they cool). While that is cooking i peal and cut the cucumber and the tomatos. Place in a big bowl. Crumble in the feta cheese. When the noodles are done I rinse them in cool water till they are cool and drain. Add noodles to tomatos and cucumbers. Add oil to the dressing and put about a tbsp on the noodles to keep them from sticking. Add the feta cheese. I normally don't add the spinach till about 5 minutes before serving. If you want to eat this salad over a few days, do not mix the spinach in. Just mix them together as you want to eat it.
