Mexican Cornbread Casserole

Ingredients
Ground beef, lean (1 lb.)1 can of cornJalapenosTaco Seasoning packetMexican Cheese1 box of cornbread
Directions
Brown meat with taco seasoning as packet recommends. Make cornbread batter as box recommends and stir in 1-2 cans of corn. In a casserole dish, layer from bottom to top the cornbread batter, cheese, ground meat, jalapenos, cheese, and batter (cornbread batter should be at the bottom and top of casserole). Cook in oven as recommended on cornbread box. Makes approximately 6-8 servings.

    I made this and it was really good. I used ground turkey instead of beef and I think next time I make it I will put less cheese to reduce the calories. - 11/22/08
