Fish and Greens

Ingredients
1 T olive oil2 med red onions, sliced thin1 green pepper, sliced thin1 27 oz can of mixed greens1 # fish fillets (about 4, I use tilapia), cut into 3x3/4" strips1/2 t sea salt1/2 t paprika1/4 t fresh ground black pepper
Directions
Start to Finish: 20 mins
4 servings

Heat oil in skillet over medium-high heat. Cook onions and pepper 4 to 6 mins, stirring occasionally, until onion is crisp-tender.

Add mixed greens and heat thoroughly.

Add fish and seasonings. Stir, cover and simmer 6 to 8 mins, stirring once, until fish flakes easily with fork.
