Bridget May's Chicken Schawarma

1/4 tsp Cinnamon2 tsp Cumin2 tsp Paprika2 tsp Black PepperDash Red Pepper Flakes1 tsp Salt2 lb Chicken (Thighs, bone-in is best)9 clove Garlic2 Red Onions1 tomato8 Jalapeno Peppers1/3 Cup Extra Virgin Olive Oil6 TBSP Lemon Juice 1/2 tsp Tumeric1/2 tsp Sumac (OPTIONAL)
1). Marinate chicken for 3-12 hours in lemon juice, oil, garlic, and other spices.
2). Heat oven to 425°.
3). Cut onion, peppers, and tomatoes into quarters (4 pieces each).
4). Place chicken on cookie sheet. Toss onions and peppers in remaining marinade and place on cookie sheet. Lastly, toss tomato and place on cookie sheet. Pour any remaining marinade over chicken and veggies.
5). Bake for 30-45 minutes or until onion tips are crispy and chicken is cooked through.
