Sausage, Bean and Cabbage Soup

Ingredients
1 tbsp Extra Virgin Olive Oil 1 medium (2-1/2" dia) Onions, raw, chopped2 small (5-1/2" long) Carrots, raw, sliced thin2 clove Garlic, minced1 pkg 14 oz Eckrich - Smoked Sausage(pork,turkey,beef) 1 can 14.5 oz can Tomatoes, Diced in Sauce Hunt's 1 can 14.5 oz can Kidney Beans, Dark Red Great Value1 can 11.5 oz V8 Juice1/2 tsp Slap Ya Mama seasoning 1/2 small head Cabbage, chopped coarse
Directions
Cook onion, carrot, garlic and sausage in olive oil until onion and carrot is tender and sausage begins to brown. Add tomatoes, kidney beans, V8 and seasoning and simmer about 30 minutes. Add cabbage and continue simmering until cabbage is cooked to desired consistency (about 15 minutes for crisp tender). Serve in soup bowls and enjoy!
