1.0 cup Hummus3.0 large whole (3" dia) Red Ripe Tomatoes2.0 cup Cut Leaf Spinich (1 cup)1.0 clove Garlic1.0 cup slices Carrots, cooked1.0 medium (2-1/2" dia) Onions, raw0.25 cup Sun Dried Tomatoes0.5 cup Bread, Progresso Bread Crumbs, Garlic and Italian Herb1.0 serving *BUTTER, SMART BALANCE LIGHT(1 TBS)28.0 gram(s) Cheese, Frigo Shredded Parmesan Cheese (1/4 cup)
Cut tops off tomatoes and remove insides save them in a bowl. Tip tomatoes upside down and let drain. Dice carrot and onion spray skillet with cooking spray and satay onions and carrots until soft add reserved tomato insides, crushed garlic, cook until most of the tomato juice is cooked out.add sun dried tomato, spinich and let spinich wilt. Final step add hummus to skillet heat till warm. Fill drained tomatoes with filling. In bowl melt butter spead in microwave add parmesan cheese and bread crumbs. Top tomatoes with bread mixture bake in 350 degree oven for 20 minutes
