Ingredients
1 roasted red pepper1/2 cup low-fat yogurt (plain) If there is any liquid on top, mix it in then add. The added liquid helps thin out the dressing. salt and pepper (calories not included) water
Directions
Place pepper and yogurt in blender. Mix until well-blended. Season with salt and pepper. If it's too thick, thin with one tablespoon of water at a time until it reaches the desired consistency.
Serves four.

    this was very tasty. I did not use the pepper since pepper makes me ill. But for me this did not affect the taste. I use kosher salt in my cooking, so I used kosher salt in this recipe. I will make this again as the small group I made it for also liked it. - 7/23/09
