Italian Green Beans

1 T. chopped shallot (may subst. onion)1 T. chopped garlic2 T. Olive Oil1 lb fresh french style green beans (may substitute 2- 15oz cans, drained)1 can stewed tomatoes1 T. basil1 T. rosemary1 t. oregano1 t. parsleySalt (I use sea salt)Pepper
Makes 5-6 servings.
Bring large pot of salted water to a boil. Blanch fresh green beans about 5 min. (these beans should remain whole, be soft, firm and bright green, but not raw. ) THIS STEP IS NOT NECESSARY FOR CANNED GREEN BEANS.
While green beans are blanching, saute scallons and garlic in olive oil in medium sauce pan until tender. Add tomatoes and spices. Heat thoughout. Add green beans and reduce heat to low until ready to serve.
