Salmon Loaf

# 440 g can red salmon, drained# 500 ml stale breadcrumbs# 3 eggs, separated# 2 celery sticks, finely chopped# ½ red onion, finely chopped# 1 spring onion, finely chopped# 5 ml mustard powder# 30ml lemon juice# 5 ml Worcestershire sauce# 125 ml milk# 15 ml margarine
1. In a mixing bowl, mix together the salmon, breadcrumbs, egg yolk, celery, red onion, spring onion, mustard, lemon juice and Worcestershire sauce and mix well
2. Bring the milk to the boil in the microwave, and add margarine
3. Allow to cool slightly
4. Beat egg whites with an electric beater until stiff
5. Fold into the salmon mixture and pour into a greased loaf dish
6. Bake at 180°C for 50 -60 minutes
7. Allow to cool for 10 minutes before turning out
8. Make a fresh herb mayonnaise and serve with the salmon loaf and a fresh garden salad.
