Couscous Cakes with Mango Bean Salsa

1 can black beans, drained1 1/3 cup mango salsa1/2 cup couscous, uncooked2 Tbsp whole wheat flour1/2 tsp sugar1/4 tsp baking soda1/8 tsp salt3/4 cup sour milk (2 tsp lemon juice or vinegar, plus enough milk to make 3/4 cup; let stand 5 minutes)1 slightly beaten egg1 tbsp olive oil
Serves 4.
For salsa, combine beans and salsa. Set aside.
In a medium bowl combine the couscous, flour, sugar, baking soda, and salt. In a small bowl combine the sour milk, egg, and oil. Stir milk mixture into flour mixture. Lightly grease a griddle or skillet; heat over medium heat. For each cake, spoon about 2 tablespoons of the batter onto the hot griddle. Cook for 4 to 6 minutes or until browned, turning to other side when bottoms are browned and edges are slightly dry.
To serve, spoon salsa mixture over cakes.
