Sherrie's Favorite Pancakes

Ingredients
1 cup whole grain pastry flour1 tbsp sugar2 tsp baking powder1/4 tsp salt1 egg1 cup 1% milk2 tbsp olive oil
Directions
Mix together the dry ingredients (flour, sugar, baking powder, salt). In a separate container beat the egg with milk and olive oil. Combine everything and stir just until blended. Let sit for a minute to thicken up. Scoop 1/8 cup of batter for each pancake.
Makes 12.
