Breakfast Hash Cassarole

Ingredients
8 large eggs4 medium potatoes3 large carrots1 medium red onion1/4 cup bacon bits
Directions
Preheat oven to 350
take a bakeing dish slighlty smaller than 9 x 13
spray it with no stick cooking spray
break the 8 eggs into it,
beat with a wire wisk
peel and grate the carrots (to shredd them)
add to eggs carefully fold in
peel and grate the potatoes (to shredd them)
add to eggs and carrots and carefully fold in
peel the onion and dice it
add to the egg mixure, carefully folding in
sprinkle the bacon bits on top and bake at 350 for 1 hour
cool , cut into six servings either serve or put in the fridge and reheat a piece at a tine in the morning in the Mircowave.
