Lemon Basil Quinoa Salad

Ingredients
2 cup Vegetable Broth 1 cup Quinoa, dry0.5 cup Trader Joe's Fire Roasted Red Peppers, diced 1 Lemon, zested and juiced1/4 cup dried cranberries 2 T minced Red Onion2 T fresh Basil, chopped
Directions
Bring broth and quinoa to boil in a saucepan. Reduce heat to medium low, cover and simmer until quinoa is tender and broth has been absored, 15-20 minutes.
Stir quinoa, lemon zest and juice together in a bowl. Add red peppers, cranberries, onion and basil. Toss to combine. Enjoy
