Sun Dried Tomato & Lentil Yum

Ingredients
3 fl oz White Wine 1 cup diced Red Onion Raw 1 cup chopped Sun Dried Tomatoes(NOT oil packed) 4 clove Garlic minced3 cups slices Mushrooms, fresh 1 tbsp Soy Sauce 2 Tbsp Nutritional Yeast 1 tsp Rosemary, dried 1.12 Cup Pacific Natural Foods Organic Mushroom Broth2 cup Spinach, fresh 2 cup Lentils, cooked
Directions
Saute onions in a splash of mushroom stock until translucent, add more as need to keep fro sticking/drying out. Add garlic and cook another min. Add mushrooms and Soy sauce. Cook until mushrooms have softened.
Add sun dried tomatoes, rosemary & wine. Simmer until reduced by half.
Add broth & nutritional yeast, warm through and add spinach.
After spinach has wilted, add cooked lentils.
