Asian Shrimp Lettuce Wraps

Ingredients
453 grams Shrimp, raw 1 cup Fresh Express Sweet Butter - Green & Red Butter Lettuce Mix 1 fruit without skin and seeds Avocados, California (Haas) 1 large (7-1/4" to 8-1/2" long) Carrots, raw 2 tbsp Jif Creamy Peanut Butter, reduced fat 0.5 cup slices Cucumber (with peel) 4 tbsp Newmans Own Lighten up Low fat Sesame Ginger Dressing 0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) salt and pepper to taste
Directions
Salt and pepper shrimp. Place in non stick saute pan. Cook 2 min on each side. Do not over cook.
Mix Sesame Ginger dressing with peanut butter.
Slice carrots, avocado, cucumber and onions.
Pull lettuce into cups.
Assemble ingredients into lettuce per your preference. Dip into or drizzle on sauce.
