Red Beans and Rice, Cajun Style

Ingredients
1 cup dried red kidney beans1 cup brown rice1 large onion\1.5 lb. smoked sausage1 Tbs. Chili Powder1 Tbs. Tabasco1 tsp. salt
Directions
The day before: rinse and sort dried beans. Cover with 4 cups cold water, and allow to soak overnight.
An hour before serving: Drain and rinse beans. Cover with 4 cups of hot water. Add rice. Chop onion and add it. Cut sausage into 12 pieces and add it. Add seasonings. Bring to a boil, reduce heat, and simmer for 60 minutes.
Makes six one cup servings.
