Turkey Spinach and Jack Cheese Egg Muffins

6 large Egg, fresh, whole, raw 0.25 tsp Cayenne Pepper (Ground) 1 tsp Badia Sazon Tropical (by DESIGNDMV) 1 tsp Cumin (ground) (by IVORYGRL1) 2 tsp Chili powder 1 tsp Oregano, ground .5 cup, chopped Onions, raw 1 serving Signature Sweets-mini peppers (3) 2 clove Garlic 0.5 package (10 oz) yields Spinach, frozen 2 tbsp Achiote or Annatto Oil (by CHUCKLES0719) 8 oz Jennie-O Turkey Store - Extra Lean Ground Turkey Breast with Natural Flavorings 4 oz Monterey Jack cheese with jalapeno, shredded.
Pre-heat oven to 350 and prepare muffin pan.
Season ground turkey with all the dry spices and set aside.
Add oil to a hot skillet and all vegetables except garlic. When veggies have cooked for 5 minutes add minced garlic cook for additional minute. Add seasoned turkey to mixture and cook until turkey turns brown. Add spinach and set aside to cool.
Beat eggs, add salt, pepper and cheese. Mix in cooled turkey mixture and pour into 6 muffin cups.
Bake at 350 for 20 to 30 minutes or until muffins set.
