Mom's Cornbread Dressing

Ingredients
pkg of cornbread stuffing2 cups onions dicd2 cups celery diced2 cups carrots chopped1 tablespoon extravirgin olive oil2 egg whites1 cup soy milk1 sp garlic powder1 tbsp poultry seasoning
Directions
Pre-heat oven to 350 degrees.

Heat saute pan, add oil then onions, celery, and carrots. cook until onions start turning transparent.. Place vegetables in large bowl. Add corn bread stuffing, seasonings and mix well. Add eggs and enough soy milk to make mixture moist.

Place mixture in a casserole dish that has been sprayed with vegetable spray. Bake in pre-heated oven for 30 to 45 minutes.
