Pineapple Marinaded Pork

Ingredients

¼ cup Pineapple chunks1 Tbsp Vinegar1 tsp. Cumin Powder1 clove Garlic2 Tbsp. Chopped onionSalt and Pepper to taste2 tbsp. Olive Oil4 oz Pork Shoulder
Combine first 6 ingredients to create a marinade.
Cut pork into 2x2” sized pieces, then add to marinade.
Allow to marinade 3-4 hours in refrigerator.
Two choices for cooking
1. Skewer meat and pineapple and grill and put marinade in sauce pan bring to a boil add thickener for dipping sauce.
2. Brown meat in skillet, add marinade bring to a boil and simmer
20 minutes, add thickener and serve.
Double the recipe for two servings.
Serve over rice with your favorite vegitable.
