Slow Cooker Chicken Jambalaya

Ingredients
*1lb uncooked boneless, skinless chicken breast, cubed.*3 cups fat-free chicken broth (low sodium optional)*3/4 cups water*1.5 cups uncooked brown rice*4 oz reduced fat chicken or turkey sausage, diced, flavor of your choice. I recommend smoked or cajun!*1/2 cup celery with leaves, thinly sliced (optional)*1/2 cup onion, chopped*1/2 cup green bell pepper, chopped (optional)*2 tsp Cajun Seasoning*2 garlic cloves, minced*1 tsp hot pepper sauce (optional, use to taste)*1 bay leaf*1, 14.5 oz can no salt diced tomatoes, undrained.
Directions
In a large nonstick skillet, saute chicken 2-3 minutes

Stir together remaining ingredients in slow cooker (5 quarts is ideal size)

Add sauteed chicken

Cover, cook on high 6 hours.

Makes 6 servings of 3 cups!
