I made this using whole wheat flour and substituted splenda for the sugar. I was great - a nice solid muffing that cured my craving for banana muffins for sure. I will definitely be making this again. Will freeze some for quick breakfasts! - 1/24/09

I just made these, and my children are enjoying them. I have some amaranth flour that I bought on a whim, so I subbed that for 1/2 of the flour & used whole wheat flour for the other 1/2. This might be the 1st recipe I've made from SparkRecipes, and I will be making these again. - 3/8/13

These smelled so good baking and were very light and yummy! I halved the recipe and it worked fine using one egg and 3 Tbs. of butter. These were great and so EASY! I'll be making these again and again! thanks! - 12/28/09

Yum. I added blueberries too. Substituted apple sauce/yogurt for butter, and maple syrup for sugar. Delicious and easy. - 9/13/09

My 11 year old daughter made these for us with some leftover bananas. They were wonderful! She sprinkled a tiny bit of coconut on top of each. - 7/30/09
