Grilled Shrimp and Corn Tostadas

Ingredients
1 pound medium shrimp, peeled and deveined2 limes, zested and juiced2 cloves garlic, grated or minced2 ears fresh corn, grilled and kernels removed from cobs2 tablespoons extra virgin olive oil1/2 cup sour cream2 teaspoons jalapeno hot sauce (green hot sauce)1/2 cup chopped fresh cilantro6 fresh corn tortillas, fried (or 6 packaged tostada shells)3 medium radishes 1 sliced jalapeno peppersalt and pepper to taste
Directions
Toss the shrimp with the lime zest and the juice of 1 lime, the grated garlic cloves, and 1 tablespoon of the oil. Grill or pan-fry the shrimp over medium-high heat, adding more oil if needed.

Grill the corn and shuck or use kernels from frozen corn and heat through.

Fry the tortillas if using fresh.

Mix the sour cream, 2 tablespoons of cilantro, the zest and juice of the other lime, the jalapeno hot sauce, and salt to taste.

Spread the sour cream mixture on the tostadas. Top with the corn, shrimp, sliced radishes, sliced jalapenos, and chopped cilantro. If desired, squeeze on additional lime juice.

Serving Size: Makes 6 servings, 1 tostada each
