Cauliflower and Mushroom Sidedish

3 cup Cauliflower, raw, riced 3 cup, pieces or slices Mushrooms, fresh 2 tbsp Olive Oil .5 cup, chopped Onions, raw 1 clove Garlic, minced 2 cup, chopped Kale .25 cup Vegetable Broth Soy sauce to tasteSalt and pepper to taste
1. Heat olive oil in large skillet
2. Saute onion for about 5 minutes
3. Add garlic and continue to cook for a minute
4. Add mushrooms and saute until browned and moisture reduces
5. Add cauliflower, and vegetable broth, cook and stir for 2-3 minutes
6. Add kale an cook another 2-3 minutes or until softened
7. Season with soy sauce, salt and pepper to taste
Serving Size: @ 1 cup
