Cinnamon Rolls Healthy and Vegan

3 cup, mashed Plantains (4 ripe)6 tbsp chopped walnuts .3 cup, packed Raisins 3 tsp Cinnamon, ground 1 cup, pitted, chopped Dates
Preheat oven 375'
Blend ripened plantains in a food processor. Spread the mixture on a silpat lined cookie sheet forming an 9" x 14" rectangle. Bake for 17 minutes. While baking blend the chopped dates with a 2-4 TB of water until a thick paste forms. Remove the dough from the oven and spread the date paste immediately on the dough then sprinkle with cinnamon, raisins, and walnuts. Roll the short end up into a roll. Then slice in 1" thick rolls. Insert a toothpick to keep the roll together. You should have about 8 rolls. Place back on the silpat and bake for an additional 10-12 minutes. Serve warm with vegan margarine, or cream cheese.
