Marinated Cucumbers & Onions

1 large English cucumber sliced thin (~6 cups)1 small sweet onion cut in half then cut into thin slices.1/4 cup cider or white vinegar1/3 cup granulated sugar1 tsp. salt1 tsp. dried dill weed or 1T fresh dill weed
Slice cucumber with a mandoline or using a blade on a food processor - you want ultra thin slices. Put into large bowl.
Slice onion into ultra thin slices. Separate rings and toss into bowl with cucumbers.
Mix together vinegar, sugar, salt, and dill. Pour over cucumbers/onions and stir well. Let marinate for at least two hours.
Makes 6 one cup servings.
