Ingredients
1 tbsp Extra Virgin Olive Oil 1 medium (2-1/2" dia) Onions, raw 2 stalk, large (11"-12" long) Celery, raw 227 grams Mushrooms, fresh 2 medium Carrots, raw 188 gram(s) Bob's Red Mill Whole Grain Red Bulgur (47g, 0.25 cup) (by SUPERMANSDEAD) 1 medium whole (2-3/5" dia) Red Ripe Tomatoes 2 cup Cut Leaf Spinich (1 cup)
Directions
on low heat Sautee onion, carrots, celery, mushrooms in olive oil. till mushrooms loose liquids. ad bulgur stir, add two cups water stir add tomatoes, and spinach cover and cook for 20 min. note I leave spinach and tomatoes floating on top, mix after 20 min. divide dish in to 4 bowls each bowl one serving
