1 eggplant, unpeeled (approx 1-1 Eggplant, fresh 3 clove Garlic .5 tsp Salt .5 tsp Pepper, black 8 tbsp Tahini .5 tsp Cumin seed 1 fl oz Lemon Juice 1 tbsp Olive Oil 1 tbsp Parsley
Preheat oven to 350°F.
Place whole eggplant onto a baking tray and bake for one hour or until skin his wrinkled and eggplant feels soft to touch. Remove from oven and allow cooling for 15 minutes.
Peel off and discard the skin. Using a fork, mash eggplant to a pulp adding garlic, salt, pepper, tahini, cumin, and lemon juice.
Place mixture in an electric blender or food processor and blend to a smooth purée.
Transfer the mixture to a serving bowl. Drizzle the oil over the top and garnish with the parsley. Service.
