Jenny's Keto Friendly Mexican Chicken Soup

Ingredients
1/3 tbsp Olive Oil 2 1/2 cups Chicken Broth 1 avocado 1 clove Garlic 1 Jalapeno Pepper1/4 tsp Cumin 8 oz boneless chicken breast - raw or cooked Salt & Pepper to taste1 tbsp Lime Juice, juice of 1 lime 1 tbsp Ghee 2 green onion stalks, minced 1 tbsp Chili powder
Directions
Chop your leftover rotisserie chicken into bite sized chunks (or if cooking raw chicken cut into 1 inch chunks). If using cooked chicken: melt the ghee in a pan on low temp. Add in the cooked chicken and season with chili powder, salt, and 1 tbsp of lime juice. Once warm through and seasoning is incorporated well remove from heat and set aside.

In medium sized pot warm olive oil over medium heat. Add green onion and jalapeno and saute until they become tender. Add in the sliced garlic and allow it to cook for about 30 seconds.

Add chicken broth and cumin and bring stove temp to medium high heat. Bring to a boil. Then, reduce the heat to medium, add the chicken along with all juices in the pan and cover, allowing to simmer. Stir occasionally for 10-15 minutes.

Take off heat and allow soup to cool a bit before serving. Spoon half the soup into one bowl and half into another. Add half of the cut up avocado to each bowl.

You can also top this with cheese if you prefer but make sure you add that into your food tracking. Enjoy!
