Quinoa Breakfast Scramble

0.25 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry 1 tbsp Olive Oil 0.5 cup, chopped Onions, raw 1 clove Garlic 0.5 cup Beans, black 2 large Egg, fresh, whole, raw 0.25 cup Egg whites, Naturegg Simply Egg Whites, 1/4 cup = 2 egg whites 0.5 cup, chopped or sliced Red Ripe Tomatoes 0.5 cup Spinach, fresh 2 tbsp Basil
Cook Quinoa per package directions.
Dice vegetables, drain and rinse canned beans.
Heat saute pan to Medium-low, add oil and onions, cook 2~3 min.
Add garlic, quinoa and beans then push all ingredients to side of pan to form a "bowl". Mix eggs in center of pan, season to taste and stir until fluffy, then mix with onion/quinoa mixture.
Add spinach, tomato and basil. Stir and cook until spinach is wilted.
