Garbanzo Madness

Ingredients
2 cans Garbanzo Beans (chickpeas), Drained1 can Rotel Tomatoes with Diced Green Chiles, (Mild, Medium, or Hot)1/4 cup Onion, diced3 cloves Garlic (minced)3 tsp Tabasco Sauce, or to taste1 Green Pepper, diced 1 Red Pepper, diced1 tsp Salt, or to taste1 tsp cumin, or to taste1 tsp Chile powder of your choice, to taste.
Directions
Serves 4, 1 cup servings.

Heat oil over medium-high heat. Add garlic, sautee a few minutes. Toss in both the onion and peppers, heat til very slightly soft, about 5 minutes. Toss in the 2 cans of Garbanzo beans, and cook until most of the liquid is gone, about 10 minutes. Add cumin and chile powder (not chili powder, though you could use that!) I used Chipotle powder but Cayenne would do well too. Pour in can of Rotel. After about a minute, give it a taste. This is where you add the salt and the tabasco (I use Cholula brand) to whatever level you desire! Heat as long as you need, and taste until you get the spice level you desire.
I serve this with corn tortillas that I brush with oil and bake at 350 until crisp.
