Mediterranean Tilapia

Ingredients
1 bunch leeks1 tbsp EV Olive OilI can Italian seasoned stewed tomato1 - 11/4 lbs of tilapia fillets (4-6 fillets)
Directions
Clean the leeks well, cut into small slices and saute in a little bit of olive oil over medium heat until soft.

Add 1 can of italian seasoned stewed tomatoes. Let cook for about 5 minutes.

Wash and rinse 4-6 tilapia fillets. Lay on top of tomato mixture and cover pan. Should take about 8 minutes to poach fish.

Serve over brown rice or pasta, and a big salad. (not included in nutritional info.)

4 servings.
Serving size = 4 oz fish, 1/2 Cup sauce.
