Rice and Bean mix

2 c. Black beans (I used one bag of dried beans, prepared)1 TBS margerine1 can sweet yellow corn3 c. uncooked white rice12 mini sweet peppers or 2 yellow bell peppers1 large videllia onion1 clove of minced garlic2 Tbsp cayenne pepper (or to your taste but it takes a lot to give this large recipe a kick)1 Tbsp ground cuminwater
either use canned black beans or make them from dried beans ahead of time.
prepare the rice in water as directed on pkg.
while the rice is going, chop onion and peppers into nice size slices (however you like them).
In a large skillet saute onions, peppers and minced garlic in margerine and heat and drain corn and beans (I suppose you could do this in the same skillet after your onions are done, I'm a glutton for punishment and whipped out extra pots and pans lol)
once everything is hot and done mix it all together in a large bowl. add in seasonings and stir well.
makes 10 large servings.
I like to use this with warm homemade tortillas or if I'm not being as healthy I stuff this in sopapillas and both ways I serve with a little shredded lettuce, diced tomatoe, sharp cheddar (grated) and fat free sour cream out on the table and everyone constructs as they want. Those things are not included in the nutritional info.
