Vietnamese Beef Stew

Ingredients
2.5 lb Beef chuck, arm pot roast1.0 tsp Amul Pure Ghee 14g/1 tbs=1 serv1.0 medium (2-1/2" dia) Onions, raw1.5 tsp Curry powder6.0 tsp Ginger Root3.0 tbsp Fish Sauce2.0 cup Del Monte Diced Tomatoes, No Salt Added0.25 cup Applesauce, unsweetened1.0 tsp, crumbled Bay Leaf1.0 cup Beef Broth - Swanson Low Sodium1.0 cup, strips or slices Carrots, raw
Directions
Brown beef in ghee in instant pot. Remove. Add diced onions and sautee. Add in ginger, curry powder, beef, tomatoes, fish sauce, applesauce and broth. Cover pressure cooker. Put on stew setting. Once it is finished, add carrots. Replace lid and cook on high setting for 7 minutes. Once that is done, serve.
