3 medium Egg, fresh, whole, raw 60 mL Heavy Whipping Cream 6 tbsp Parmesan Cheese, grated 1/4 tsp salt300 grams Zucchini 6 medium slices, cooked (raw pro Bacon, pork, microwaved black pepper to taste
Cut zucchini noodles (zoodles). Set aside. Blend until smooth the eggs, whipping cream, Parmesan, salt and set aside. Cook bacon in the pan until crispy and then remove from pan. Add zoodles to the pan with the bacon fat, and heat through. Working rapidly add the sauce to the zoodles and cook until just thickened. Overcooking leads to scrambled eggs and zucchini. Serve and top with pepper and then crushed bacon.
